About
Dany Bolduc is known, among other things, for his work as Executive Chef at H4C and Sobremesa. He brings more than 25 years of experience in the world of gastronomy. His career has taken him across Canada, France and England, where he had the privilege of working alongside Michelin-starred chefs.
Over the course of his travels — nearly 20 countries in 10 years — he discovered cultures, culinary traditions and flavours that deeply enriched his culinary background. From brasseries to bistros, from fine dining to event catering, one guiding principle has always remained the same: respect for the product and the pleasure of eating well.
Oxalis was born from a unique challenge: becoming the Executive Chef of the Cirque du Soleil cafeteria for two years, with the mandate of feeding international athletes and employees. This experience transformed the way he approached cooking, as a new element came into play: his meals had to support athletes through their training.
Naturally curious, Dany began researching and developing balanced menus without sacrificing flavour, variety or the joy of eating. He later applied this new way of thinking to his own life — and today leads his teams 15 kilograms lighter!
As life sometimes has a way of bringing the right opportunities at the right time, an opportunity arose to take over the Cirque du Soleil and Collège Grasset contracts. That opportunity gave birth to Oxalis. Since then, its mission has become clearer, its teams have grown stronger, and the company is now ready to bring its culinary philosophy to new businesses and educational institutions.
As chef-owner Dany Bolduc so aptly puts it:

With ultra-processed foods occupying an ever-growing place in today’s food offering, it has become essential to return to a more thoughtful way of cooking — one prepared with carefully selected ingredients, primarily from local sources. From the very beginning, Dany has woven oxalis into his culinary creations to surprise guests and spark their curiosity. He even uses it as a delicate touch of greenery and refinement — both as an elegant centerpiece for the table and as a beautiful garnish on the plate.
