Executive Chef at H4C and Sobremesa, I bring over 25 years of experience in the culinary world. My journey has taken me across Canada, France, and England, where I had the honor of working alongside Michelin-starred chefs.

Over five years, I explored twenty countries, immersing myself in diverse culinary cultures, traditions, and flavors—experiences that continue to enrich my approach to cooking.

From brasseries to bistros, from fine dining to event catering, my guiding principle has always been the same: respect for the ingredient and the joy of good food.

Today, I bring this experience to Oxalis, driven by the belief that cooking is not only about taste but also about well-being and education—fueled by a deep passion for the culinary world and the desire to share it.

Why Oxalis ?

Oxalis was born from an exciting challenge: feeding international athletes for Cirque du Soleil. This experience transformed my vision of cooking and inspired me to share this passion on a larger scale.

Our mission is simple: share culinary culture with everyone and show that gastronomy, health, and pleasure come together in everyday meals.

We believe that preparing the next generation for well-being starts with thoughtful, flavorful meals rooted in the richness of our terroir—an approach that takes shape as early as in schools.
